This mermaid ice cream cake is made with layers of my mint choc chip and dairy ice cream on a biscuit base.

It is then decorated in a light turquoise frosting, pastel swirls and chocolate mermaid tails, shells and starfish.

This mermaid ice cream cake is made with layers of my mint choc chip and dairy ice cream on a biscuit base.

It is then decorated in a light turquoise frosting, pastel swirls and chocolate mermaid tails, shells and starfish.

How To Serve

  • Please keep me frozen at -18°C until I’m needed.

To serve cakes:

  • To serve ice cream cakes, remove from the freezer 10 minutes before required, to allow the ice cream to soften a little.
  • Use a skewer dipped in hot water to make a hole for any candles or toppers – this bad boy is frozen hard and will happily snap any fancy additions.
  • To slice, a sharp knife dipped in hot water will give you the best clean slices.
  • Your ice cream cake can remain out of the freezer for up to 30 minutes (this is reduced in one of those crazy heatwave type situations!)

To serve pies:

  • All our ice cream pies will benefit from a few minutes out of the freezer before serving. Large pies can be left out for a bit longer.
  • To serve, a sharp knife dipped in hot water will give you the best clean slices.
  • Your ice cream pie can remain out of the freezer for up to 20 minutes (this is reduced in one of those crazy heatwave type situations!)

Left over ice cream

  • Should there be any left over ice cream, you can pop it back in the freezer for another day. We recommend wrapping it in some tin foil or clingfilm to stop freezer burn.
  • Your ice cream will last up to 3 months once opened/cut.
